Saffron is well known for its culinary gift as a potent and highly prized spice imparting a rich flavour to culinary dishes. This potent flavour comes from the stamens of the saffron flower, a type of crocus that grows in Iran, India and Spain. Saffron contains the carotenoids crocin and crocetin which, like other carotenoids, are powerful antioxidants. Apart from these antioxidants, saffron is also comprised of safranal. Primarily responsible for the spice’s distinctive smell, this molecule is also used as an active principle in a number of therapeutic preparations. Traditional Ayurvedic and Persian systems of medicine have long featured Crocus sativus for its exceptional composition and health-beneficial properties, attributes which have been confirmed in numerous studies on the plant.
